By providing mulch like barrier underneath the plant with hay or shredded leaves it keeps the soil cool, holds in moisture and prevent weeds. If the fruit is picked when under ripe, it can have a bitter taste. A perfect eggplant will stop growing bigger, with a glossy skin and a dust of seeds. An under ripe eggplant will not have seeds and overripe fruits will have dark seeds.
